Ingredients
• 20 fresh mushrooms, stems removed
• 2 (6.5 oz.) cans minced clams, drained
• 2 cloves garlic, peeled and minced
• 1/2 cup grated Parmesan cheese
• 1 small onion, finely chopped
• 3/4 cup dry bread crumbs
• 1/2 cup chopped green bell pepper
• 2 tbsps. dried parsley
• 2 tbsps. Italian-style seasoning
• ground black pepper to taste
• 1 1/2 cups butter, melted
• 1/2 cup shredded mozzarella cheese
Direction
• Preheat oven to 350 °F (175 °C). Grease a baking dish of 9x13 inch lightly.
• Place mushroom caps in baking dish, hollow side up.
• In a medium bowl, mix garlic, minced clams, onion, Parmesan cheese,
green bell pepper, bread crumbs, parsley, black pepper and Italian-style
seasoning together. Stir in about half the butter slowly, enough to make the
mixture slightly moist.
• Stuff clam mixture generously into mushroom caps. Scatter mozzarella
cheese over. Drizzle with the rest butter.
• In the preheated oven, bake for approximately half an hour until lightly
browned.
